Chokker (wheat bran) cutlet is a good way of having chokker, which is an excellent source of fiber. Wheat bran consists of the outermost layer of the seed along with some flour. It is a flaky, reddish-brown material that is quite palatable and is well known for its ability to prevent constipation because of its swelling and water holding capacities. Bran has a high capacity to absorb water and swell because of its fiber and nonstarch carbohydrates (β glucans) and so it has a bulk effect in the colon, giving it laxative properties.

Ingredients

  • Chokker : 150gms
  • Cauliflower, grated : 1 cup
  • Spinach, finely chopped : 1 cup
  • Potato, boiled, peeled, grated : 1.5 cup
  • Green Chillies, chopped : 2-3
  • Green Corriander, chopped : 1/4 cup
  • Salt : As per taste
  • Black Pepper ; 1 tsp
  • Oil : To shallow fry

Recipe

Mix together the chokker, grated veggies along with potato. Add green chilies, coriander, salt & pepper.

Shape the mixture into round balls and flatten a bit. Refrigerate for 1/2 hour.

Heat a nonstick frying pan, brush with a little oil, and brown the cutlets on both sides.

Serve hot.
